"Workin On My Fitness"

Not to go into too much detail but I'm still not quite healed from my delivery, mostly running is a no no. Not to mention I don't want to waste the small amount of time I have working out. Week nights fly by now, between playing with Piper, getting her to bed, cooking, cleaning, and then getting everything ready for the next morning there leaves little time for any "me" time. So Pinterest has been my number one go to for some quick 30 day workouts. I love these pins I have been finding for things I can do at my home, when I have 15-20 minutes to get moving. Last month I did an ab and squat challenge and decided I needed to get my mom arms into shape again so I made my own arm workout to do with it. I don't know if I saw much changes but B seems to think it's done something. I tried to do cardio on the weekends but like I said, it's going to be a no go for the next little bit...an easy excuse to really take some more time for myself and doing the little time I do have for things I really like to do. 

I've found a couple more workouts I'm going to start tomorrow. You know took the last few days off to rest and enjoy the end of the summer with the fam..a.k.a, on the couch, shopping, lunching with friends, etc! (it's the small things that really count). 


Die for this butt, but won't give up chocolate for it;)

Give me some NRG!

Who doesn't need a little bite of *NRG mid morning, afternoon or whenever! When you do it's so nice to reach for one of these little ditty's. 


No-Bake NRG Bites
Ingredients:
1 cup oatmeal (dry)
1 cup toasted coconut flakes (the recipe calls for this but I did not use, I substituted chopped up mixed nuts)
1/2 cup chocolate chips (I only had dark chocolate hershey's kisses so I chopped them up and used them)
1/2 cup peanut butter (mmmmm...)
1/2 cup ground flaxseed (again I didn't use it, I cook with what I have on-hand)
1/3 cup honey
1 tsp. vanilla

Mix all ingredients together! Easy as can be! 
You can substitute almost anything you would like in for the coconut, but keep the honey as it will play part in keeping it all together. 
Refrigerate for 10-20 minutes, then roll into 1" balls (or bite size). 
Such a quick and easy snack and not to mention healthy. I made these a couple times, the second time I didn't use the chopped nuts, I used mini chocolate chips and I bought wheat germ to substitute for the flaxseed. 

Will refrigerate for up to a week in a sealed container


*NRG= short for energy. My high school biology and chemistry teacher would write it like that, since then I have always shortened the word.

A Good Kind of Garbage...

Sometimes garbage can be a good thing. I know, I didn't think it would be possible either until I came across this little pile of deliciousness...


Buffalo Chicken Garbage Bread


What you need:
 2 boneless chicken breasts
1 tsp. olive oil
1 pizza dough (I used store bought and let it sit out for during the day to rise)
8 oz. of shredded mozzarella cheese 
3 oz. of shredded cheddar cheese
1/2 cup of Franks Wing Sauce
1/3 cup of ranch or blue cheese dressing (I use the yogurt ranch dressing)


Directions
Pre-heat oven to 425

Heat Olive Oil heat in pan and cut chicken up into bits and cook through. Once cooked add 1/4 cup of the wing sauce to coat the chicken. 

 In the meantime, spread out the dough and cover with your choice of sauce. I used the wing sauce and the Yogurt Ranch, mix together and pour onto bread. 



Next add the cheese, you can use whatever you want but I used shredded cheese. 



 Add the chicken to the top and roll up. It's not easy but don't worry (they don't call this garbage plate for nothing), make sure to tuck the ends under.
Bake for 20-25 minutes or until the cheese is bubbling. 

 And Wallah! There you have it! A beautiful and large lump of goodness. If I were to name this it would be the "5 pound calzone". 

ps. for those of you who don't know me my hubs is a big guy so i may have used more chicken than my "garbage" could hold. i'm sure if you keep to the recipe more it probably won't "overflow" like mine did (or weigh 5 pounds)
